  • 5 cups (about 700g) fresh or frozen wild huckleberries (if frozen, thaw and drain excess liquid)

  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ยฝ teaspoon ground cinnamon (optional)
  • 1 egg, beaten (for egg wash)
  • Coarse sugar for sprinkling on the crust (optional)

Instructions

  1. In a large bowl, whisk together 2 ยฝ cups flour, 2 tablespoons sugar, and ยฝ teaspoon salt. Add the cold, cubed butter. Using a pastry cutter or two knives, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.
  2. Sprinkle 6 tablespoons of ice water over the mixture, stirring gently with a fork. Add more water, 1 tablespoon at a time, until dough just holds together when pressed. Divide the dough in half, shape into disks, wrap in plastic, and chill for at least 30 minutes.
  3. In a medium bowl, combine wild huckleberries, ยพ cup sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, and ยฝ teaspoon cinnamon if using. Stir gently to coat berries evenly. Let sit while dough chills.
  4. On a floured surface, roll one dough disk into a 12-inch circle about โ…› inch thick. Transfer it to a 9-inch pie dish, letting the edges hang over. Patch any tears with extra dough.
