  • 3 cups (about 300 grams) fresh broccoli florets (or frozen, thawed and drained)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger (or Β½ teaspoon ground ginger)
  • 1 teaspoon brown sugar
  • 1 tablespoon cornstarch
  • ΒΌ cup (60 ml) water or beef broth
  • 2 tablespoons vegetable oil (or peanut oil)
  • Optional: red pepper flakes or fresh chili for heat
  • Optional: sliced green onions for garnish

Instructions

  1. Slice 8 ounces (225 grams) of flank steak thinly against the grain into strips about ΒΌ inch (0.6 cm) thick. Place the beef in a mixing bowl. (Tip: partially freezing the beef for 30 minutes makes slicing easier.)
  2. Marinate the beef by adding 1 tablespoon soy sauce, 1 teaspoon cornstarch, and Β½ teaspoon vegetable oil. Toss well to coat evenly and let sit about 10 minutes while prepping broccoli.
  3. Wash and cut about 3 cups (300 grams) of fresh broccoli into bite-sized florets. If using frozen, thaw and drain excess water.
  4. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar, ΒΌ cup (60 ml) water or beef broth, 3 minced garlic cloves, and 1 teaspoon grated fresh ginger.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add broccoli and stir fry for 2-3 minutes until bright green and crisp-tender. Remove broccoli and set aside.
  6. Add remaining 1 tablespoon vegetable oil to the pan. Spread beef strips in a single layer and sear without stirring for 1 minute. Stir fry for another 1-2 minutes until browned but not overcooked. (Avoid overcooking to keep beef tender.)
  7. Return broccoli to the pan. Pour sauce over beef and broccoli. Stir quickly to coat and cook for 1-2 minutes until sauce thickens and glazes the ingredients.
  8. Remove from heat. Garnish with sliced green onions or red pepper flakes if desired. Serve immediately over steamed rice or noodles.

Notes

Partially freezing the beef makes slicing easier. Use high heat and do not overcrowd the pan to get a good sear. Stir fry broccoli just until crisp-tender to avoid sogginess. The cornstarch slurry thickens the sauce; simmer longer if needed but avoid over-thickening. Marinate beef while prepping other ingredients for efficiency.
