Instructions

  1. Prepare the slaw: In a medium bowl, combine diced mango, avocado, shredded red cabbage, chopped red onion, and cilantro. Drizzle with olive oil and fresh lime juice. Toss gently to combine without mashing the avocado. Season with salt and pepper. Set aside.
  2. Season the shrimp: Pat shrimp dry with paper towels. Toss with chili powder, ground cumin, salt, and pepper until evenly coated.
  3. Cook the shrimp: Heat a large skillet over medium heat. Melt butter, add minced garlic and sauté for about 30 seconds until fragrant without browning. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque.
  4. Warm the tortillas: While shrimp cooks, warm tortillas in a dry pan or wrapped in foil in the oven at 350°F for 5-7 minutes.
  5. Assemble the tacos: Place shrimp on each tortilla and top generously with mango avocado slaw. Optionally, squeeze extra lime juice on top. Serve immediately.
