These quick small-batch chocolate chip cookies come together in about 20 minutes with no chilling required. They have perfectly crispy edges, soft gooey centers, and melty chocolate chips—just like the ones from a beloved diner.

  • 2 tablespoons (25g) granulated sugar
  • 3 tablespoons (40g) light brown sugar, packed
  • 1 large egg yolk, room temperature
  • ½ teaspoon vanilla extract
  • ⅓ cup (42g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the middle of the oven.
  2. Melt the butter in a microwave-safe bowl in 15-second bursts until just melted. Let cool slightly if bubbling.
  3. In a medium mixing bowl, combine the melted butter with granulated sugar and packed light brown sugar. Whisk or stir with a fork until well combined (about 30 seconds).
  4. Add the room temperature egg yolk and vanilla extract. Whisk vigorously for about 1 minute until lighter in color and slightly thicker.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a rubber spatula just until no streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips with 3-4 gentle strokes until evenly distributed. The dough will be soft and slightly sticky.
  7. Using a 1.5-tablespoon cookie scoop or tablespoon, scoop 6 equal portions of dough onto a baking sheet, spacing them about 2 inches apart.
  8. Bake immediately for 10-12 minutes. At 10 minutes, edges should be golden brown and centers slightly underdone and puffy.
  9. Leave the cookies on the baking sheet for 5 minutes to set, then transfer to a cooling rack. Serve warm.

Notes

Use room temperature egg yolk to prevent butter from seizing. Do not overmix the dough. Weigh flour for accuracy (42g). Let cookies cool on the pan for 5 minutes before transferring. For make-ahead, freeze scooped dough balls and bake straight from frozen, adding 1-2 minutes.
