These no cream watermelon popsicles are a quick, budget-friendly, and refreshing summer treat made with just five simple ingredients. Perfect for hot days, they are light, hydrating, and naturally sweetened.

  • 4 cups watermelon, cubed and seeds removed
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or agave nectar
  • A handful of mint leaves, finely chopped (optional)
  • 1/2 cup water

Instructions

  1. Cut about 4 cups of ripe watermelon into cubes, removing seeds.
  2. Add watermelon cubes, 2 tablespoons fresh lime juice, 2 tablespoons honey or agave nectar, chopped mint leaves, and 1/2 cup water to a blender.
  3. Blend on high for 1-2 minutes until completely smooth.
  4. Optional: Pour the blended mixture through a fine mesh sieve to remove pulp for smoother popsicles.
  5. Pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and cover with lids or foil.
  6. Freeze for at least 4-6 hours or overnight until firm.
  7. To unmold, run warm water over the outside of the mold for 10-20 seconds and gently pull the sticks. Serve immediately.

Notes

Adjust honey or lime juice to taste depending on watermelon sweetness. For smoother popsicles, strain the mixture. Use agave nectar for a vegan sweetener. Fresh mint is optional but adds a refreshing hint. To release popsicles easily, run warm water over molds briefly. Store popsicles in freezer up to two weeks, tightly covered to prevent freezer burn.
