Ingredients

Instructions

  1. Prepare the Red Layer: In a blender, combine frozen strawberries, water or juice, honey or maple syrup, and lemon juice. Blend on high until smooth and slushy but thick. Pour into chilled glass filling about one-third. Freeze for 10 minutes to set.
  2. Make the White Layer: Rinse blender. Add coconut milk, powdered sugar, vanilla extract, and ice cubes. Blend until creamy and slightly thickened. Spoon or pour over the red layer. Freeze for 10 minutes to firm up.
  3. Prepare the Blue Layer: Clean blender. Blend frozen blueberries with water or juice, sweetener, and lime juice until smooth and icy. Pour gently over the white layer using the back of a spoon to avoid mixing.
  4. Serve immediately or chill for 10 minutes for a firmer texture. Stir gently before drinking if it sets too much.
