  • 23 fresh lavender sprigs (or 1 teaspoon dried culinary lavender)
  • 1/2 cup (120 ml) fresh lemon juice
  • 1/3 cup (65 grams) granulated sugar (or honey/agave nectar as substitute)
  • 4 cups (960 ml) chilled sparkling water
  • 1 cup (240 ml) water (for lavender syrup)
  • Ice cubes (preferably large)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Make the Lavender Syrup (10 minutes): In a small saucepan, combine 1 cup (240 ml) water, 1/3 cup (65 g) granulated sugar, and fresh lavender sprigs. Bring to a gentle boil over medium heat, stirring occasionally until sugar dissolves. Reduce heat and simmer for 3-4 minutes to infuse lavender flavor. Remove from heat and steep for 10 minutes. Strain syrup through a fine mesh sieve into a heatproof bowl, discarding lavender. Set aside to cool.
  2. Prepare the Peach Puree (5 minutes): Peel and slice peaches. Place in blender and puree until smooth. For extra smooth texture, strain puree through a fine sieve to remove fibrous bits.
  3. Juice the Lemons (5 minutes): Squeeze fresh lemons to get 1/2 cup (120 ml) juice. Remove seeds but keep some pulp if desired.
  4. Combine Ingredients (5 minutes): In a large pitcher, mix cooled lavender syrup, peach puree, and fresh lemon juice. Stir well to blend.
  5. Add Sparkling Water (just before serving): Pour in 4 cups (960 ml) chilled sparkling water. Stir gently to combine without losing fizz.
  6. Serve: Fill glasses with ice cubes and pour over the sparkling peach lavender lemonade. Garnish with fresh mint leaves or a thin peach slice.

Notes

Use large ice cubes to prevent quick dilution. Steep lavender syrup for no longer than 10-15 minutes to avoid bitterness. Stir gently after adding sparkling water to preserve fizz. Syrup and puree can be made up to 2 days ahead and stored separately in the refrigerator. Adjust sweetness by reducing sugar or adding more sparkling water. Frozen peaches can be used if fresh are unavailable; thaw and drain excess juice before blending.
