A simple and refreshing frozen rosé slushie made with frozen watermelon chunks, perfect for summer gatherings and quick to prepare.

  • 750 ml Rosé Wine (dry or off-dry, chilled)
  • 4 cups cubed and frozen seedless watermelon
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons simple syrup (homemade or store-bought)
  • 68 fresh mint leaves (optional, for garnish)

Instructions

  1. Cut fresh watermelon into 1-inch cubes, place on a baking sheet lined with parchment paper, and freeze for at least 4 hours or overnight.
  2. Chill the rosé wine in the fridge for 1-2 hours before blending.
  3. If making simple syrup at home, combine equal parts sugar and water in a saucepan, heat gently until sugar dissolves, then cool.
  4. In a high-speed blender, combine 4 cups frozen watermelon cubes, 1 1/2 cups (360 ml) chilled rosé, 2 tablespoons lemon juice, and 2 tablespoons simple syrup.
  5. Blend on high for about 1 minute or until smooth and slushie-like.
  6. Check consistency and taste; add a splash more rosé if too thick or more syrup if not sweet enough, then blend briefly again.
  7. Pour into glasses and garnish with fresh mint leaves and a small watermelon wedge if desired.
  8. Serve immediately.

Notes

Freeze watermelon cubes well for best slush texture. Chill rosé thoroughly before blending. Avoid adding ice cubes to prevent dilution. Pulse blender before full blending to avoid overworking the motor. Adjust sweetness after blending to taste. Serve immediately for best texture.
