A simple, fresh, and truly refreshing summer drink combining sweet watermelon, bright mint, and tangy lime juice for a perfect balance of flavors.

Ingredients

Scale
  • 6 cups seedless watermelon, cubed (about 900 grams)
  • 1012 fresh mint leaves, gently bruised
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 2 cups cold water (can substitute some or all with sparkling water)
  • 12 tablespoons agave syrup, honey, or sugar (adjust to taste)
  • Ice cubes for serving
  • Optional: pinch of sea salt
  • Optional: additional mint sprigs for garnish

Instructions

  1. Cut approximately 6 cups of seedless watermelon into cubes.
  2. Place the watermelon cubes in a blender and pulse until smooth, about 1-2 minutes.
  3. Pour the blended watermelon through a fine mesh strainer into a large bowl or pitcher to remove pulp and seeds (optional).
  4. Gently bruise 10-12 fresh mint leaves by clapping them between your hands or lightly smashing with a rolling pin.
  5. Add the bruised mint leaves, 2 cups cold water, juice of 1 large lime, and 1-2 tablespoons sweetener to the strained watermelon juice. Stir well to combine.
  6. Chill the agua fresca in the refrigerator for at least 30 minutes to let flavors meld. Alternatively, add ice cubes directly to the pitcher if short on time.
  7. Serve over ice cubes in glasses and garnish with a sprig of fresh mint.

Notes

Straining the watermelon juice is optional but recommended for a silky texture. Gently bruise mint leaves to avoid bitterness. Adjust sweetness after tasting. Use fresh lime juice for best flavor. Chill thoroughly for optimal refreshment. Can substitute sparkling water for fizz or use frozen watermelon cubes as ice.
