  • 4 to 6 bratwurst sausages
  • 12 oz (355 ml) lager or pilsner beer
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil
  • 4 to 6 hotdog buns (white, pretzel, or gluten-free)
  • Mustard (Dijon or spicy brown), to taste
  • Salt and black pepper, to taste
  • Optional toppings: sauerkraut, pickles, shredded cheese

Instructions

  1. Peel and thinly slice 2 large yellow onions evenly.
  2. Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-low heat. Add onions and a pinch of salt, stirring to coat. Cook slowly, stirring every 5 minutes, for 30-40 minutes until deeply golden and sweet. Add water or reduce heat if onions stick.
  3. Place bratwursts in a medium saucepan and pour in 12 oz lager or pilsner. Bring to a simmer over medium heat and cook gently for 10-12 minutes.
  4. Preheat grill or grill pan to medium-high heat. If indoors, preheat broiler and line baking sheet with foil.
  5. Remove bratwursts from beer bath and pat dry. Grill for 3-4 minutes per side until casings are crisp and browned, turning gently with tongs.
  6. Brush hotdog buns lightly with melted butter and toast on grill or in pan until golden and slightly crisp.
  7. Assemble hotdogs by placing bratwurst in buns, topping generously with caramelized onions, and adding mustard and optional toppings. Serve immediately.

Notes

Do not rush caramelizing onions to develop deep sweetness. Use tongs to turn bratwursts to keep juices locked in. Simmer bratwursts in beer before grilling to infuse flavor and keep moist. Toast buns just before serving to avoid sogginess.
