  • 34 roasted Hatch green chile peppers, peeled and diced
  • 1 small jalapeño, finely chopped (optional)

Instructions

  1. Preheat your broiler or grill. Place whole Hatch peppers on a baking sheet and roast, turning occasionally, until the skin is blistered and charred (about 10-15 minutes). Transfer to a bowl and cover with plastic wrap to steam for 10 minutes.
  2. Once cool, peel off the blackened skin, remove seeds if you want milder heat, and dice the peppers finely. Set aside.
  3. Place your cast iron skillet in the oven and preheat to 425°F (220°C) so the pan is hot when you pour the batter.
  4. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  5. In another bowl, beat eggs, then whisk in milk and melted butter until combined.
  6. Pour wet ingredients into dry ingredients. Stir gently until just combined—do not overmix.
  7. Fold in shredded cheddar, diced Hatch peppers, and jalapeño if using.
  8. Carefully remove the hot skillet from the oven, grease lightly with butter, and pour the batter in. Spread evenly.
  9. Return to oven and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  10. Let the cornbread cool in the skillet for 10 minutes before slicing and serving.
