  • 1 tablespoon honey
  • 1/4 cup grated Parmesan cheese

  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse garlic scapes under cold water and pat dry. Trim off tough ends and cut into 3-inch pieces.
  3. In a large mixing bowl, whisk together olive oil, balsamic vinegar, and honey until blended. Add salt and black pepper, then toss the garlic scapes until evenly coated.
  4. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the garlic scapes out in a single layer.
  5. Roast in the oven for 15-18 minutes, stirring or shaking the pan gently halfway through to ensure even browning. Scapes should be tender with some crispy edges and a deep golden color.
  6. Remove from oven and immediately sprinkle grated Parmesan over the scapes. Let the residual heat melt the cheese slightly.
  7. Let cool for a minute or two before serving.
