Simple Spinach Artichoke Cream Cheese Pinwheels

These easy, no-bake pinwheels combine creamy cream cheese, spinach, and artichokes rolled in soft tortillas, perfect for quick school lunches or snacks.

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (150 g) frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup (75 g) marinated artichoke hearts, finely chopped
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 6 pieces 6-inch (15 cm) flour tortillas

Instructions

  1. Thaw frozen spinach completely, then squeeze out as much moisture as possible using a clean kitchen towel or paper towels (about 5 minutes).
  2. Finely chop marinated artichoke hearts; pulse briefly in a food processor if a smoother texture is desired (3-4 minutes).
  3. In a mixing bowl, combine softened cream cheese, squeezed spinach, chopped artichokes, grated Parmesan, garlic powder, salt, and pepper. Stir well until fully blended and creamy. Taste and adjust seasoning if needed (5 minutes).
  4. Lay a tortilla flat on a clean surface. Spread about 2-3 tablespoons of the cream cheese mixture evenly over the tortilla, leaving a small border around the edge (2 minutes).
  5. Starting from one edge, roll the tortilla firmly but gently to avoid cracking, until you have a tight log. Wrap the roll in plastic wrap and refrigerate for at least 15 minutes to help it set and make slicing easier (15 minutes chilling time).
  6. Remove the plastic wrap, and using a sharp knife, cut each roll into 1-inch (2.5 cm) slices. Arrange on a plate or pack into lunch containers (3-4 minutes).
  7. Optional: For a warm option, place pinwheels on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until lightly golden. They are also delicious served cold or at room temperature.

Notes

Squeeze spinach dry to avoid soggy pinwheels. Soften cream cheese at room temperature for easier spreading. Chill rolls before slicing for clean cuts. Optional baking adds a warm, golden touch but is not necessary.
