  • 2 tablespoons olive oil
  • 1 teaspoon salt (for potatoes)
  • 1 teaspoon salt (for chicken seasoning)
  • 1 teaspoon freshly cracked black pepper (plus extra for potatoes)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels. Season generously with 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon dried thyme, and 1 teaspoon dried oregano.
  2. In a medium bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes if using. Set aside.
  3. Place the seasoned chicken thighs in a single layer in the slow cooker. Pour half of the honey garlic sauce over the chicken, reserving the rest.
  4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken reaches an internal temperature of 165°F (74°C). Avoid lifting the lid frequently.
  5. About 30 minutes before the chicken finishes, toss potatoes with olive oil, 1 teaspoon salt, and a pinch of black pepper.
  6. Spread potatoes on a rimmed baking sheet in a single layer and roast in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through until golden and crispy.
  7. Transfer chicken thighs to a baking sheet, brush with reserved honey garlic sauce, and broil for 3-5 minutes until skin crisps but does not burn.
  8. Serve chicken thighs with crispy potatoes, spoon extra sauce over the top, and garnish with fresh parsley.

Pat chicken dry to ensure crispy skin. Broil chicken at the end to crisp skin as slow cooker does not crisp. Roast potatoes separately in the oven to avoid sogginess. Use a meat thermometer to ensure chicken reaches 165°F. Sauce can be thickened by simmering on stove if too thin. Potatoes can be pan-fried if no oven is available.
