Spooky Monster Eyeball Deviled Eggs – Easy Halloween Recipe

These spooky deviled eggs are transformed into creepy monster eyeballs with black olive pupils and paprika bloodshot veins. They’re a fun, easy, and delicious Halloween appetizer that will be the hit of any party.

  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (plus extra for dusting)
  • 1 can (6 oz) large black olives (whole, pitted)
  • Fresh chives (optional, for wormy details)
  • Red food coloring (optional, for extra veins)

Instructions

  1. Boil the eggs: Place the 12 eggs in a large pot and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let the eggs sit for exactly 12 minutes.
  2. Ice bath: While the eggs are sitting, prepare a large bowl of ice water. When the 12 minutes are up, transfer the eggs immediately to the ice bath using a slotted spoon. Let them cool for at least 10 minutes.
  3. Peel carefully: Gently tap each egg on the counter to crack the shell all over, then roll between your palms to loosen the shell. Start peeling from the wider end. Rinse peeled eggs under cold water.
  4. Slice and scoop: Using a sharp knife, slice each egg in half lengthwise. Gently pop out the yolks into a small mixing bowl. Arrange the egg white halves on a serving platter, cut-side up.
  5. Make the filling: Add the mayonnaise, yellow mustard, white vinegar, salt, pepper, and garlic powder to the bowl with the yolks. Mash together with a fork until smooth and creamy.
  6. Prepare the olive pupils: Drain the black olives and pat dry with a paper towel. Slice each olive crosswise into rounds about 1/4-inch thick. Set aside.
  7. Pipe the filling: Transfer the yolk mixture to a piping bag fitted with a star tip (or a zip-top bag with the corner snipped off). Pipe a generous swirl of filling into each egg white half, mounding it slightly in the center.
  8. Add the pupils: Using a toothpick or your fingers, gently place one olive slice onto the center of each filling mound. Press down very lightly so it sticks.
  9. Create the bloodshot effect: Sprinkle a generous pinch of paprika over each egg. Use your fingertip or a small brush to smear the paprika slightly outward from the olive, creating red ‘veins’ that radiate across the white of the egg.
  10. Add optional details: For extra creep factor, use a toothpick dipped in red food coloring to draw tiny veins on the egg whites, or snip fresh chives into tiny pieces and scatter them around the olives.
  11. Chill before serving: Refrigerate the platter of deviled eggs for at least 30 minutes before serving. The eggs will keep in the fridge for up to 24 hours if covered tightly with plastic wrap.

Notes

Use older eggs for easier peeling. For the olive pupils, make sure they are dry before placing them on the filling to prevent sliding. Make a few extra eggs to account for any that peel badly or crack. For best appearance, assemble no more than 4-6 hours before serving.
