This creamy, smoky chipotle dip is the ultimate game-day crowd-pleaser. With minimal prep and a slow cooker doing the work, it delivers deep, complex flavor that keeps everyone coming back for more.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1 cup sour cream
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 23 chipotle peppers in adobo sauce, finely minced
  • 1 tablespoon adobo sauce
  • 1/2 cup cooked and crumbled chorizo or spicy ground sausage (optional)
  • 1/4 cup finely diced red onion
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Optional garnish: fresh cilantro, diced tomatoes, sliced green onions, or a squeeze of lime juice

Instructions

  1. Prep your ingredients first. Let the cream cheese soften at room temperature for about 30 minutes. Finely mince the chipotle peppers, dice the red onion, and mince the garlic. Measure out your cheeses.
  2. Cook the chorizo (if using). Heat a small skillet over medium-high heat. Add the crumbled chorizo and cook for 4-5 minutes, breaking it up, until browned and crispy. Drain excess fat and set aside.
  3. Combine the creamy base. In a mixing bowl, beat the softened cream cheese until smooth. Add the sour cream and mix until fully combined.
  4. Add the flavor builders. Stir in the minced chipotle peppers, adobo sauce, smoked paprika, cumin, diced red onion, and minced garlic. Mix until evenly distributed.
  5. Fold in the cheeses. Add the Monterey Jack and sharp cheddar, reserving about 1/2 cup for the top. Fold gently until evenly incorporated.
  6. Transfer to the slow cooker. Scrape the mixture into the slow cooker and spread into an even layer. If using chorizo, fold half in and leave half on top.
  7. Cook low and slow. Cover and cook on LOW for 2 hours, or on HIGH for 1 hour. About 30 minutes before serving, sprinkle the reserved cheese on top and let it melt.
  8. Stir and serve. Give the dip a gentle stir before serving. Garnish with fresh cilantro, diced tomatoes, or sliced green onions if desired. Serve warm with tortilla chips, crusty bread, or fresh veggie sticks.

Notes

For best results, let cream cheese soften at room temperature. Low and slow cooking prevents dairy from separating. Chipotle peppers in adobo are salty, so taste before adding extra salt. The dip can be assembled the night before and refrigerated. Leftovers keep for up to 5 days in the fridge or 3 months in the freezer.
