  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • For the toasted walnut streusel:
  • 1/2 cup (60g) chopped walnuts
  • 2 tbsp brown sugar
  • 1 tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • 2 tbsp cold unsalted butter

Instructions

  1. Brown the butter: In a skillet over medium heat, melt the 1/2 cup unsalted butter. Stir frequently and watch closely as it foams and turns golden brown with a nutty aroma, about 4-5 minutes. Pour into a mixing bowl to cool slightly (about 5 minutes).
  2. Mix sugars and eggs: Add 3/4 cup granulated sugar and 1/4 cup brown sugar to the browned butter. Whisk until combined. Crack in 2 large eggs one at a time, mixing well after each addition.
  3. Add bananas and vanilla: Stir in the mashed bananas and 1 tsp vanilla extract. The mixture may look loose—this is normal.
  4. Combine dry ingredients: In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt.
  5. Fold dry into wet: Gently fold the dry ingredients into the wet mixture using a spatula. Mix just until combined; some lumps are okay.
  6. Prepare the streusel: In a small bowl, toss 1/2 cup chopped walnuts with 2 tbsp brown sugar, 1 tbsp flour, and 1/2 tsp ground cinnamon. Cut in 2 tbsp cold butter with fingers or fork until crumbly.
  7. Assemble and bake: Pour batter into a greased 9×5 inch loaf pan. Sprinkle walnut streusel evenly on top. Bake at 350°F (175°C) for about 60 minutes. Check at 55 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. Cool and serve: Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

Watch the butter carefully when browning to avoid burning. Leave some small chunks in the mashed bananas for texture. Toast walnuts in a dry skillet or oven before adding to streusel. Tent with foil if streusel browns too fast. For gluten-free, use a 1-to-1 gluten-free flour blend and add xanthan gum if needed.
