Wholesome One-Bowl Pumpkin Banana Bread

This easy, one-bowl pumpkin banana bread is moist, tender, and packed with warm spices. Made with simple, wholesome ingredients, it’s the perfect cozy treat for fall mornings or anytime you need a comforting slice.

  • 1 ½ cups (190g) whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (60ml) melted coconut oil
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 1 cup (about 2 medium) very ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • ½ cup (90g) dark chocolate chips (optional)
  • 2 tablespoons pumpkin seeds for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and position a rack in the center. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides, or grease it well.
  2. Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the pumpkin puree, eggs, melted coconut oil, brown sugar, and vanilla extract to the bowl with the mashed bananas. Whisk or stir until well combined and smooth.
  4. Add the dry ingredients (whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt) on top of the wet mixture. Do not stir yet.
  5. Stir gently with a wooden spoon or spatula just until no streaks of flour remain, about 12-15 strokes. If adding nuts or chocolate chips, fold them in with the last few strokes.
  6. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle pumpkin seeds on top if using. Tap the pan gently on the counter once or twice to release air bubbles.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil halfway through.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper and transfer to a cooling rack. Cool completely before slicing.

Notes

Don’t overmix the batter; mix just until combined. Use room temperature ingredients to prevent coconut oil from solidifying. Check baking soda freshness for proper rise. Let the bread cool completely before slicing to avoid a gummy texture. The bread becomes more moist and flavorful on day two.
