  • 3 medium ripe bananas, mashed
  • 1/2 cup whey protein powder (unflavored or vanilla)
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs, room temperature
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1/3 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together whole wheat flour, rolled oats, whey protein powder, baking soda, cinnamon, and salt.
  3. In another bowl, mash the bananas until mostly smooth. Add eggs, Greek yogurt, honey or maple syrup, vanilla extract, and melted butter. Whisk until combined and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Avoid overmixing.
  5. Fold in the optional chopped walnuts or pecans.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, checking for doneness at 50 minutes with a toothpick. It should come out mostly clean with a few moist crumbs.
  8. Let the bread cool in the pan for 10-15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Use unflavored or vanilla whey protein powder for best taste. Avoid overmixing to prevent toughness. Check moisture levels and add a tablespoon or two of milk or yogurt if batter is too thick. Start checking for doneness at 50 minutes to avoid dryness. Let bread cool fully before slicing for best texture.
