  • 1 pound (450g) ground turkey (preferably lean with some fat, 93/7)
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste (about ½ teaspoon salt and ¼ teaspoon pepper)
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil or avocado oil
  • ½ cup (120g) plain full-fat Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley or dill
  • 1 teaspoon Dijon mustard (optional)
  • Whole wheat burger buns or lettuce leaves for serving

Instructions

  1. In a large mixing bowl, combine ground turkey, finely chopped onion, minced garlic, smoked paprika, salt, and black pepper. Mix gently just until combined, about 3-5 minutes. Avoid overmixing.
  2. Heat olive or avocado oil in a cast-iron skillet over medium-high heat until shimmering, about 3 minutes.
  3. Divide the turkey mixture into 4 equal portions (about 4 ounces each). Place one portion in the skillet and press down firmly with a spatula to form a thin patty about ½ inch thick.
  4. Cook patties undisturbed for 3-4 minutes until edges are golden and crispy. Flip carefully and cook the other side for 3 minutes or until internal temperature reaches 165°F (74°C).
  5. While patties cook, whisk together Greek yogurt, lemon juice, chopped herbs, Dijon mustard (if using), and a pinch of salt and pepper in a small bowl. Adjust seasoning to taste.
  6. Toast buns lightly if desired. Spread a generous amount of yogurt sauce on the bottom bun or lettuce leaf, add the turkey patty, then top with more sauce and your favorite toppings. Serve immediately.

Notes

Do not overmix the turkey to keep burgers tender. Smash patties thin for crispy edges and juicy interior. If patties stick when flipping, gently loosen with spatula. The sauce can be made ahead and stored in the fridge. For dairy-free, substitute Greek yogurt with coconut milk yogurt and add extra lemon and garlic.
