  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, mash the banana with a fork until almost liquid, with no large chunks.
  2. Add the peanut butter and vanilla extract, and mix until fully combined.
  3. Pour in the milk and sweetener (if using), and whisk until the peanut butter is completely dissolved.
  4. Stir in the rolled oats and chia seeds (if using), ensuring every oat is coated.
  5. Divide the mixture evenly into jars or airtight containers, leaving about an inch of space at the top.
  6. Refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, stir well. If too thick, add a splash of milk. Top with a drizzle of peanut butter, banana slices, and a pinch of flaky salt. Serve cold or microwave for 30 seconds if desired.

Notes

Use a very ripe banana for natural sweetness and creamy texture. Do not oversoak beyond 12 hours to avoid mushiness. Add toppings fresh in the morning, not before refrigerating.
