  • 1/2 cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium speed for 3-4 minutes until pale and fluffy.
  3. Add the pumpkin puree and vanilla extract to the butter mixture. Beat on low speed just until combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. In a small bowl, mix the coating sugar, cinnamon, and nutmeg.
  8. Scoop dough into 1.5-tablespoon balls and roll them in the cinnamon-sugar mixture until fully coated.
  9. Place cookies on baking sheets, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look slightly soft.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use canned pure pumpkin puree, not pie filling. Ensure butter is softened but not melted. Chilling the dough is crucial for texture. If cookies spread too much, ensure oven temperature is accurate. Store in an airtight container at room temperature.
